Study digital temperature in the chamber drying

This work presents the results of a theoretical study of the kinetics of drying bananas in an indirect solar dryer with forced convection. A mathematical model such as that of the heat transfer and mass coupling was used to simulate the operation of the drying system developed. The finite differences method was used for numerical resolution. The results obtained allowed us to evaluate the filling effect of the racks (decrease or increase of the free surface), the temperature of the product and the air, drying gas over the drying time. For this study the change in the difference between air temperature and the product at any moment allowed us to know the real drying time (t = 50 dimensionless value). This value is confirmed by other results found in this study.
